Sausage is a type of sausage cured of Greek and Roman origin, it is made with lean pork and some contents of bacon, seasoned with salt and some spices such as pepper, nutmeg, clove and coriander. All this ground mass is left to macerate for 24 hours and is then stuffed into the intestine of a cow or pig, hanging it to its cure, which can be 'to smoke' (smoked) or simply dry, for a few days.
